Pre-ordered the book ages ago, now patiently (not really) waiting for it to get published so I can bake plenty of small batches cookies. The cake looks amazing, on the list to impress guests with something so simple yet so delicious.
Hi Edd, I just tried the recipe. I baked in two tins as opposed to one because i didn’t have a deep enough tin. Both cakes sank in the middle. When I looked in the oven after 20 minutes (without opening the door) both had sank. Raising agents are quite new so they should have been ok. Oven temp maybe? Any advice would be much appreciated. Thanks so much!
So sorry I only just saw this comment. The most likely reason is too much raising agent causing it to rise aggressively but then collapse whilst still baking. This would also happen if you switched the baking powder and the bicarbonate of soda as the balance would be out of alignment, don’t suppose that might be what happened?
