Love the twists you’ve put in your version! Financiers are generally a bit one-dimensional for me. Einkorn is also a favorite flour that I keep in my arsenal, so yay to that.

I must say, as a Northern Californian, I totally appreciate your heat aversion. Most of our houses are not insulated and are heat traps, and it’s always bloody hot from April to Oct; the time of year I want to celebrate the summer bounty without spending time in my stupefyingly hot kitchen!

Ed I am sure you get lots of samples like the Einkorn flour and Panela sugar sent to you. But at about £10 a kilo for the flour and £6.50 for the sugar PLUS postage who in these days do you think is going to send for these? They are certainly not stocked ANYWHERE in rural north Yorkshire! Fancy , very hard to find products turn me off, not onto baking.

That’s a totally valid opinion and I understand where you are coming from, but that’s also why I have provided more widely available options for those ingredients should you not want to try them. I like writing recipes with interesting ingredients that you may not have tried because it’s one of the things that inspires me. It’s also one recipe amongst hundreds on this newsletter. I’m also not sure where you’re looking at the flour but Doves Farm, who are the biggest sellers of that particular flour in the UK, sell it at £3.59 a kilo. And just a note to say I bought all of those ingredients.
